 Chocolate Brownie Cookies

What you’ll need:

1 ¼ cup butter, softened

½ cup vegetable oil

3 cups sugar

4 medium eggs

1 Tbsp. vanilla extract

2/3 cup black cocoa powder

2/3 cup Dutch cocoa powder

½ tsp. salt (omit if using

salted butter)

½ tsp. baking powder

2 tsp. cinnamon

2 tsp. espresso powder

1 tsp. chipotle chili powder (optional)

5 cups all-purpose flour

Directions -

Mix butter, oil and sugar until just combined. Beat in eggs and vanilla extract. Sift dry ingredients with 3 cups of the flour, add to wet

ingredients, mix until just combined. Add 2 cups flour until play-dough-like consistency is reached. Take a portion of the dough to roll out. Cover the remaining dough with plastic wrap to prevent premature drying of dough. Dust counter with flour, roll dough to ½” thickness. Press with lightly floured mold and trim. Place cookies on parchment lined baking sheet. Chill for 20 minutes before baking. Bake at 355° F for 6 to 14 minutes, according to size of cookies. Rotate the baking sheet halfway through baking. Cool cookies on baking sheet for 5 minutes before removing.
